High Hydration Process Line.

Gaudí is a line of hydrated doughs to produce Ciabatta, it is able to produce breads with hydration from 50% to 100%, depending on the flour used.

It has tremendous versatility of sizes and weights of pieces. So, “Gaudí” can produce tipped bread, round, hexagonal and more.
