Multiproduct High-Hydration Dough Line.
Gaudi is an industrial dough sheeting line designed to produce ciabatta bread and other breads whose hydration values reach up to 100%, depending on the type of flour.
It has maximum versatility in terms of product size and weight, thus being able to make pointed, rounded, and hexagonal loaves, among others.
Rolling/shaping module and seed module are optional.
Able to work with gluten-free dough.

Touchscreen + Wireless Screen
Very intuitive color touch screen, to make easier the configuration of recipes.
Chunker
Receives bulk dough and transforms it into continuous bands, with minimal stress on the dough.
Flour dusters
Removable Flour duster with speed inverter.
Lamination station
Gradually reduces the dough thickness through a series of adjustable rollers, ensuring uniform and controlled lamination.
Calibration and cutting station
Second large pressing roller, adjustable to facilitate lamination. Adjustable disc cutting system.
Separator belts
Separates dough lanes to avoid tension and ensure a uniform flow. Improves alignment and transition between modules.
Guillotine
Swinging guillotine cutting system. Easy access for guillotine replacement.
Retractable placing belt
Accurately places dough portions onto trays or boards. Synchronizes with the separation conveyor and downstream systems.
Cross sheeter
Expand the dough sheet laterally until it reaches the target width.
Molding system
For the preparation of rustic bread, bread with pointed tips, chusco bread, etc.
Seeds system
Seed module equipped with industrial nozzles ensuring uniform spray application without dripping.
