New “Viena” installed in PANE Forno Italiano

After a year, we are so delighted to return again to PANE FORNO ITALIANO in Italy for the installation and commission of their new Viena, along with their previously installed CompactLeo.

Viena is an automatic water scoring system that cuts fermented doughs, including GLUTEN-FREE ones, by waterjet. It can perform a wide variety of scoring types adapting to all types of products and memorize them by means of very simple and intuitive recipes.

  • Able to score a rack of 16 trays in less than 2 minutes and a half.
  • Made entirely of AISI 304 stainless steel.
  • Equipped with WifiEthernet and Technology 4.0. connectivity.
